Botcher, City Manager FROM: Karen Engelhardt, Office Manager DATE: September 20, 1999 SUB J: Request for On-Sale Intoxicating Liquor License, RT Minneapolis Franchise, LLC RT Minneapolis Franchise, LLC is requesting council consideration of an on-sale intoxicating liquor license for a new Ruby Tuesday Restaurant at 450 Pond Promenade in the Villages on the Ponds. The building contains approximately 5,220 sq. ft., with the restaurant area seating 170 and the bar area seating 32 (see attached floor plan). The menu includes a wide variety of entrees, salads, fajitas, hamburgers, and sandwiches (see attached menu). A notice of public hearing was published in the Chanhassen Villager and was Sent to all property owners within 500 feet of the site. Staff has not received any comments from the public regarding this request. The Public Safety Department has completed a background investigation and criminal history review on the sole officer of the Limited Liability Company--Mr. Anthony Ruta Geurrino. No negative comments were found. Mr. Geurrino currently operates the Ruby Tuesday Restaurants in Edina, Bloomington, and Roseville. Since this restaurant is in the "proposed" stage, he has not yet hired an Operating Manager for this location. Staff will conduct a criminal history background investigation on that person once the position is filled. The council will be notified if any violations are found. RECOMMENDATION Staff recommends approval of the on-sale liquor license for RT Minneapolis Franchise, LLC dba Ruby Tuesday contingent upon the following: Submittal of liquor liability insurance effective until May 1, 2000.
